This updated soup recipe is similar to the recipe which I had originally posted, but only the method of preparation has changed. There is no cornstarch added in this one and all the smoothness and creaminess comes from blending the onions, tomatoes and addition of cream.

Put the mixture into a blender. Add half and half, heavy cream and bananas and whirl until soup is smooth. Season with salt pepper and lemon juice. Serve chilled or hot, garnished with banana chips or coconut.


Pick off the leafy tops from the watercress and set aside a small handful for garnish, if you want to. Discard the stalks. Peel and finely chop the onion. Melt the butter in a large saucepan over low heat, add the onion and fry gently for 5 minutes to soften but not brown. Meanwhile, peel and cut the potatoes in even-sized chunks. Pour the stock into the pan, add the bay leaf and season with salt and pepper. Bring to the boil, add the potatoes, then lower the heat and simmer gently, covered, for 15 minutes until the potatoes are tender. Add the watercress and bring back to the boil. Draw off the heat, discard the bay leaf and stir in the milk. Pass soup through a food mill, or puree in a blender or food processor.


To make the broth, remove the neck and giblet pack from the chicken cavity and the thermometer from the exterior and discard. Add 7 quarts of water to the 12 quart soup pot and turn the stove on high. Chop 1 carrot, 1 celery stalk, and 1 onion into chunks and add to the water along with a crushed head of garlic (paper removed, of course). Place the chicken in the pot, cover and bring to a boil.
